Local Taste: Triggerfish with Oyster and Leek Fondue

The Triggerfish was served with a 2009 Anne Amie Cuvee A Amrita that was warm and sparkly.

Clean and bitter Amrita set against the flaky and creamy Triggerfish made for a memorable dish that cleaned up after itself.
