  • 25 Mussels
  • 1 oz. Shallots (Julianne)
  • 3 oz. Roasted Tomato
  • 2 oz. Butter
  • 5 oz. White Wine
  • Salt & Pepper To Taste

Steps

  • Sauté mussels and shallots for 2 minutes, using a hot sauté pan with half an ounce of oil
  • Add roasted tomato and butter until melted
  • Add white wine & salt and pepper to taste
  • Cook until all mussels are open
  • 6 minute total cook time

Adding roasted tomato and butter is the secret behind our flavor packed “Tomato Reduction” listed on the menu. The resulting savory-sweet tomato sauce brings a little acidity and is a perfect complement to the salt of the mussels. Sautéing your mussels until they open helps ensure that they are both fully cooked and have had time to soak up the delicious flavors of the other ingredients.
